Roasting Red Peppers

Red was the theme last week, I bought red fabric and red peppers were on special at McQuades, my favourite local grocery store.

So we roasted/broiled them and served with a dollop of red lentil hummus (inspired from the menu at the Urban Oasis Cafe) with pea shoots garnish.

Leap Day Dinner was another batch of roasted red peppers with summer rolls.............A lot of fine chopping for the ingredients, even the shrimp were sliced in half.
with these practice made perfect.

The keys are: don't be tempted to over fill, soak the wrap just enough and not too much, have a friend with patience that can take over when you get frustrated that the rolls are wonky and falling apart.
